Beets poriyal

This is one of my favorite poriyals. Very easy to make in short time. I always have few beets in our fridge and it comes in handy for a last minute side dish for rice.

Ingredients

  • Beets ——————————- 2 medium size
  • Onion —————————— 1 small size
  • Grated coconut ————– 1/4 cup
  • Chili powder ——————- 1/4 tsp
  • Turmeric powder ———– 1/8 tsp
  • For tempering
    • Mustard seeds ———- 1/2 tsp
    • Split urad dal ————- 1 tsp
    • Curry leaves ————– 2 springs
    • Cooking oil —————- 1 tbsp

How to make

  • Wash the beets and peel off the skin
  • Then grate it using a regular grater
  • Dice the onion into small pieces
  • Place a pan on medium heat
  • Add oil and once it is hot, add the mustard seeds
  • After the mustard crackles, add the urad dal and curry leaves
  • Then add the diced onion and saute for 2 minutes
  • Add the grated beets and stir fry for 2 minutes
  • Add the chili powder, turmeric powder and salt
  • Stir fry it for about 10 minutes
  • Then add the grated coconut and mix it well
  • Keep stirring for 2 more minutes and switch off the stove
  • Now the tasty beets poriyal should be ready to serve
