Paruppu vadai/Masala vadai

You can find this snack in every small tea shop in our hometown. In the evening, people will gather after their work to sit in front of the tea shop on a bench, to discuss local/global news and gossips. Paruppu vadai is one of the popular snacks goes well with the cup of hot tea. Also, if unexpected guests happen to arrive at home, it is handy to run to the nearby tea shop and get some paruppu vadais for the guests. Usually, these shops will wrap it in fresh banana leaf and give.

Ingredients

  • Kadalai paruppu (Split chickpeas) _____ 2 cups
  • Onion ———————————————————- 1 medium size (diced)
  • Dry chilies ————————————————- 4
  • Green chilies ——————————————— 2 (minced)
  • Grated ginger ——————————————– 1 tbsp
  • Curry leaves ———————————————- 4 springs (cut into small pieces)
  • Fennel seeds———————————————- 1 tsp
  • Salt to taste
  • Enough cooking oil to fry

How to make

  • Soak the kadalai paruppu and dry chilies in water for 3 hours
  • Then take a handful of soaked kadalai parupui and keep it aside
  • Grind the remaining kadalai paruppu and dry chilies using a mixer/blender into a coarse mixture
  • No need to add water
  • Add all the ingredients to a wide vessel and mix them well
  • Place a frying pan on medium heat and add enough oil to fry
  • From the mixture take a handful and make a round, then press with the other hand to make it little flat
  • Drop the vadai in the hot oil carefully
  • Fry it until it becomes golden brown
  • In between turn it around, so that both sides are cooked evenly
  • When it is cooked, the bubbles also will reduce
  • When you take it out, drain the oil in the pan and keep it in a tissue towel, this will help removing any extra oil.
  • Serve it with hot tea or coffee
